Vegetable Sausage Soup Recipe

This soup is absolutely amazing! All of my favourite vegetables are added to this soup. I wanted to use up the beyond meat sausages that I had left in my fridge. You can sub them for real meat sausages. I hope you enjoy this soup as much as I do.


Vegetable Sausage Soup Recipe
Ingredients
- ½ White Onion Cubed
- 1 Clove Garlic Minced
- 2 Celery Stalks Sliced
- 2 Carrots Sliced
- 3 Yukon Gold Potatoes Cubed
- 3 Cup Spinach
- 4 ½ Cup Chicken Broth or 4 ½ Cups Water with 1 Tbsp of Better Than Bouillon
- 3 Uncooked Large Sausages (I used Beyond Meat Sausages)
- ½ Tsp Dried Basil
- ½ Tsp Dried Oregano
- 2 Tbsp Olive Oil
- Salt & Pepper to taste
Instructions
- In a large pot, add Olive Oil and Sausage. Sauté until lightly golden; remove sausage from pot and set aside.
- In the same pot add Onion, Garlic, Celery, and Carrots. Sauté for 15 minutes, or until carrots are soft.
- Add in the broth, bring to a simmer and add Potatoes, Oregano, and Basil. Simmer for 15-20 minutes, or until potatoes are tender.
- Add Spinach and sausage into the pot, cook untill spinach is wilted. Add Salt and Pepper to taste.
- Serve and enjoy!
