Single Serving Veggie Vermicelli Soup Recipe

Ooooo Noodles and Mushrooms!! If you follow me on Instagram you can tell when I am obsessed with making one type of food! Well for the past month I have been loving this soup that I have been making. I had Enoki Mushrooms in the fridge starting to go bad and since I have never cooked or tried them before I decided to cook them in a pot and add broth! After this I fell in love with Enoki Mushrooms! Fall in love with them as I did! 

Single Serving Veggie Vermicelli Soup Recipe

Servings 1


  • 1/2 Cup Enoki Mushrooms
  • 1/4 cup Diced Red Pepper (I like to use more depending on the day)
  • 1 Tbsp Spinach
  • 1 Cup + Splash of Olive Oil
  • Sprinkle Red Pepper Flakes (Optional)
  • 2 Cup Boiled Water
  • 1/2 Cup Dry Vermicelli Noodles 
  • 1 1/2 Tsp Chicken or Vegetable Bouillon 
  • 1/2 Tsp Sesame Seeds 
  • 1/4 Tsp Seasoning Salt 


  • In a bowl mix together Chicken Bouillon, Splash of Olive Oil, Boiled Water, Dry Vermicelli Noodles, and Red Pepper Flakes. Keep cover for approximately 10 minutes (I put a pot lid on the bowl.) 
  • In a sauce pan Sauté over medium heat 1/2 Tbsp of Olive Oil, Onion, and Red Pepper.
  • Add Enoki Mushrooms and Spinach. Mix until wilted. 
  • Add Seasoning Salt and  Sesame Seeds.
  • Add pepper, mushroom, spinach mixture into the noodles and broth mixture.
