I have been making Matcha Chia Seed Pudding for so many years now! Matcha chia seed pudding is a vegan, healthy, creamy, filling, and an energizing snack.

This recipe is simple, requiring only 5 ingredients that are totally versatile.

Make this the night before for breakfast or mid-day snack or you can prep it in the morning for a simple dessert to enjoy in the evening.

Matcha Chia Seed Pudding Recipe

Course Dessert

Ingredients
  

  • 1 Tsp Matcha Green Tea Powder
  • 1 (400ml) Can Coconut Milk
  • 5 Tbsp Chia Seeds
  • 2 Tbsp Maple Syrup
  • 1 Tsp Vanilla Extract
  • Toppings of choice: fresh fruit shredded coconut, matcha

Optional: If you would like your pudding to be more liquidy add 1/4-1/2 Cup of almond milk

    Instructions
     

    • In a medium-sized container, mix together, Matcha, Coconut Milk, Chia Seeds, Maple Syrup, and Vanilla Extract. Stir until combined, making sure there are no clumps of chia seeds.
    • Place in the fridge for 2 hours or overnight to set.
    • Enjoy and add toppings if desired.
    • Keep in covered in the fridge for up to one week. I bet it will be gone before then. 🙂

    Notes

    Substitutions – 
    Full Fat Coconut Milk can be substituted with reduced coconut milk, almond milk, cashew milk, cow’s milk.
    Maple Syrup can be substituted with, honey, agave, corn syrup, brown rice syrup.
