Creamy Vegetable Lentil Soup Recipe

This is a wonderful vegan soup filled with fresh vegetables and lentils. Even though there is no milk or cream in these recipes when you blend all of the vegetables and lentils together you get a really creamy soup. Creamy Vegetable Lentil Soup Recipe

Course Soup


  • 2 Tbsp Olive Oil
  • 1 Medium Onion Diced
  • 3 Garlic Cloves Roughly Chopped
  • 2 Cup Broccoli Roughly Copped
  • 2 Carrots Roughly Chopped
  • ¼ Head of Cauliflower Roughly Chopped
  • 1 Cup Lentils (I used a lentil mix)
  • 4 Cup Vegetable Broth
  • 3 Cup Water
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • ¼ Tsp Red Pepper Flakes
  • 1 Tsp Thyme
  • 1 Tsp Basil

Garnish: 1 – 2 Green Onion Sliced, Sliced Almonds, Pumpkin Seeds, Croutons


    • In a large pot heat Olive Oil over medium heat, add Onion and Garlic. Cook until translucent, about 5 minutes.
    • Add Carrots, Broccoli, and Cauliflower and cook for 15-20 minutes, until vegetables are softened.
    • Add Lentils, Broth, Water. Bring to boil on high heat, cover pot with lid, reduce heat to low and simmer for 20 – 25 minutes. Soup is done when lentils are tender.
    • Add Salt, Pepper, Red Pepper Flakes, Thyme, and Basil.
    • Using an immersion blender or high-speed blender puree until a smooth consistency.
    • Ladle into bowls and top with garnish if desired.


    – Fresh broccoli can be substituted for frozen broccoli
    – Fresh carrots can be substituted for 1 ½ cups of frozen carrots
    – Fresh cauliflower can be substituted for 1 ½ frozen cauliflower
    – Fresh garlic, add 1 teaspoon each of garlic powder at sautéing vegetable stage
    – Fresh onion, add 1 teaspoon each of garlic powder at sautéing vegetable stage
