Chocolate Chia Seed Pudding Recipe

Matcha chia seed pudding has been my go to for many years now. I recently tried chocolate chia seed pudding and wow is it ever amazing!!! I blended it to have more of a pudding constancy. I know some people can’t do the texture of chia seeds so blending them can be more enjoyable. 

This chocolate chia seed pudding is a vegan, healthy, creamy, filling, and an energizing snack. 

This recipe is simple, requiring only 5 ingredients that are totally versatile. Make this the night before for breakfast or mid-day snack or you can prep it in the morning for a simple dessert to enjoy in the evening.

Chocolate Chia Seed Pudding Recipe

Ingredients
  

  • 1 Cup Almond Milk
  • Cup Chia Seeds
  • ¼ Cup of Maple Syrup
  • 2 Tbsp Cocoa Powder
  • Pinch Salt
  • Pinch Cinnamon
  • 1 Tsp Vanilla Extract

 Toppings of choice: fresh berries, shredded coconut, cocoa powder, cocao nibs

    Instructions
     

    • High powered blender or food processor add Almond Milk, Chia Seeds, Maple Syrup, Cocoa Powder, Salt, Cinnamon. Start blending on low setting and then progress to high speed. Blend until the mixture is smooth, scraping down the sides of the blender or food processor if needed.
    • Chia pudding should be thick and ready to enjoy. If you like your chocolate chia seed pudding cold, transfer to a resealable container, cover and refrigerate for 3+ hours.
    • Plate, add toppings if desired, and enjoy!

    Notes

    Substitutions – 
    Almond Milk can be substituted with coconut milk, almond milk, soymilk, cashew milk, cow’s milk.
    Maple Syrup can be substituted with, honey, agave, corn syrup, brown rice syrup.
