Black Bean Soup Recipe

Who craves beans and soup? If you do this is the perfect recipe for you. The creaminess of this recipe is wonderful. The recipe is similar to Mexican black bean soup without the heat. I hope you all enjoy it! 

Black Bean Soup Recipe

Course Soup
Servings 2


  • 2 Cup Beans
  • 2 Whole Tomatoes from a Can
  • ½ of a White Onion Chopped
  • 2 Garlic Cloves Peeled
  • 1 Tsp Olive Oil
  • 1 ½ Cup Vegetable Stock
  • ¼ Tsp Oregano
  • ½ Tsp Salt
  • Red Pepper Flakes to tastes (I added 1 Teaspoon)
  • Pinch Black Pepper
  • ½ of an Avocado Cubed Garnish
  • A dollop of Sour Cream (Garnish Optional)


  • In a medium pot saute Onion and Garlic Cloves in a dollop of oil
  • Add the Tomatoes to the onion and garlic
  • Add the Beans and Vegetable Stock
  • Add Oregano, Red Pepper Flakes, Salt, and Black Pepper
  • Cook for 5 minutes
  • Add 3/4 of the mixture to a blender and pulse blend (let some of the warm air out as you blend)
  • Add mixture back to pot for a final 5-10 minute simmer
  • Serve and garnish with 1/4 Avocado and Sour Cream
